Fermenting Fundamentals
Enjoy an evening hands on worskshop that covers the science of fermentation in this beginner-friendly, hands-on workshop. Learn how simple ingredients, beneficial microorganisms, and time work together to create delicious, flavourful foods. Explore safe fermentation techniques and gain the confidence to start making your own fermented foods at home.
In this course, students will learn how to operate a fire extinguisher and the basic principles of fire suppression. The course will provide students with knowledge and awareness where they will be deemed capable of identifying risk factors and taking appropriate steps in case of fire. This fun and hands-on class is the perfect introduction to cooking for kids and teens ages 11-15. Students will learn the fundamentals of working safely and confidently in the kitchen while creating simple, delicious meals from scratch.
Throughout the class, young chefs will explore food safety basics, including proper handwashing, safe food handling, and how to keep a clean workspace. They’ll also learn common kitchen terms, how to identify and properly use essential kitchen tools, and practice basic knife skills in a safe, supervised environment. As their confidence grows, students will apply what they learn by preparing easy, homemade recipes, snacks, and beginner-friendly meals. The focus is on building practical skills, encouraging creativity, and helping kids feel comfortable cooking for themselves and their families.
By the end of the class, students will have a strong foundation in kitchen basics, improved cooking confidence, and a collection of simple recipes they can recreate at home.

Occupational Health and Safety Acts and Regulation Training
In this course, students will learn about the purpose and principles of the Occupational Health and Safety Act and Regulations. This course will provide students with a greater understanding for Health & Safety law in Ontario. It is primarily designed for JHSC members, health and safety representatives, supervisors, other interested workers and members of management. Canada’s Ozone Layer Protection Awareness Training Program is based on Environment Canada's “Code of Practice for Elimination of Fluorocarbon Emissions in Refrigeration and Air Conditioning Systems”. This course will deal with environmentally-correct equipment design, proper handling of refrigerants, and will prepare participants for complying with provincial regulations covering refrigeration and air conditioning systems. Specific topics covered are: Science of ozone depletion, isolation valving, recommended components, leak detection methods, system charging procedures, special maintenance provisions, and refrigerant recovery, reuse, recycle and reclamation equipment. Each attendee will receive the Participant Manual to refer to in class and take home. Participants who achieve a mark of 75% or better on the exam will receive an Ozone Depletion Prevention (ODP) card. This card must be renewed every five years for those who purchase or handle refrigerants across Canada. Note: this course is strictly theory and does not incorporate hands-on training. Anyone in residential, commercial, industrial, domestic, automotive and mobile cooling applications would benefit from taking this course. This course is offered via distance education where the students and instructor through Contact North site. Manual and exam included in the course fee. This intermediate course for youth 11-16 will build on your kitchen skills and take your cooking to the next level. This hands-on course is designed for youth who are comfortable with basic cooking techniques and want to expand their confidence, creativity, and independence in the kitchen. Participants will learn more advanced food preparation methods, knife skills, cooking techniques, and kitchen organization while preparing a a meal. Students will explore flavour combinations, food safety, nutrition, and ingredient selection while working both independently and as part of a team. Preserve the season, one jar at a time! Join us for an evening of pickling and preserving in this beginner-friendly workshop. Learn the basics of pickling vegetables, making fruit preserves, and safely jarring tomatoes and simple sauces. No experience needed!
A hands-on introduction and demonstrations of sausage making. Learn about the different types of recipes, styles of sausages, various seasoning options, and the essential equipment needs to make your own sausages. You will be able to take home your own sausages at the end of class. Make sure to bring your apron and take-home containers. Proper sanitation and hygiene will also be covered during the course.

Challenge yourself to present more comfortably in public! The Toastmasters International Speechcraft program provides the opportunity to learn, practice, share and have fun. This is a “hands-on” improve-by-doing program, run in conjunction with a regular Toastmasters meeting. People come to our classes because they are afraid to speak and stay because they discover it’s fun! This is an at-your-own-pace workshop in a fully equipped woodworking shop with a patient, fun, knowledgeable woodworking instructor to answer all your questions. You are required to bring your own project idea and materials to class. Safety is stressed and project review will be discussed at first class. Some woodworking knowledge would be an asset. Classes held in the Dorion building on Campus.
Have you always wanted to try your hand at woodworking and can’t commit to a lengthy course? Do you have an idea for a small project that you need help with? We will supply the expert, shop, tools, and the plans (upon approval and consultation with the instructor), you supply the materials to create your own project. Safety, project review and materials list will be discussed at first class. Come out and learn a new skill in a safe and encouraging environment while creating a one-of-a-kind piece.
